This noodle-free Pad Thai recipe is packed with veggies – it’s a colorful and flavorful recipe that is much healthier than takeout!

Traditionally, Pad Thai is made with rice noodles, which are stir-fried with eggs, and chopped firm tofu. Then, it's flavored with tamarind pulp, fish sauce, dried shrimp, garlic or shallots, red chili pepper and palm sugar. To add some extra flavor and texture, it can be served with lime wedges and chopped roasted peanuts.
